Why do people assume that liver is good for cats or anyone for that matter?

I don't. In fact, I don't think the human body was made to process any meat, liver or whatever. Cats are different. They eat the whole animal and the liver is a small piece of it. It just rounds the diet out. Like we need little bits of sugar, but too much sugar is a problem..
